OrchardWorld's Festive Turkey & Cherry Glaze

It’s getting near to Christmas, and we are picturing the ideal Christmas scene: it’s snowing outside as the children are making snow angels and snow people, the adults are indoors busy preparing the dinner, the log fire is burning, lights and decorations twinkle, Christmas tunes are playing, and all the family are together. Recipe below...



Serves 10 | Prep/Cooking Time 300 mins


INGREDIENTS


1 Large Fresh Turkey (serving 10 people)

170g Cup Unsalted Butter

2 tsp OrchardWorld Lemon Zest

Salt and Pepper

½ head of smashed Garlic Cloves


METHOD

After the turkey has rested at room temperature for 1 hour.

  1. Preheat oven to 190 degrees C.

  2. Dry the outside of the turkey well with a kitchen towel and dry the inside as well.

  3. In a mixing bowl stir together the butter and lemon zest and smother over Turkey.

  4. Stuff garlic and parsley into the cavity of the turkey. Transfer to oven rack on the bottom shelf of the oven.

  5. Roast in preheated oven for about 2 hours 20 minutes to 3 hours 30 minutes. Pop some aluminium foil over the Turkey to prevent excessive browning.

  6. 5 minutes before the end, remove the aluminium and pour some of the Cherry Glaze over the turkey and cook for the remainder of the time.

  7. Using a meat probe, make sure the internal temperature of the turkey is 74°c.

  8. Let turkey rest for 30 minutes (up to 60 minutes) then carve and serve with the remainder of Cherry Glaze.

CHERRY GLAZE

Serves 6 | Prep/Cooking Time 30 mins (15 min prep and 15 min cook)


INGREDIENTS

  • 600g OrchardWorld Cherries (pitted)

  • 300g  brown sugar 

  • 150ml dry Sherry

  • 3 Cinnamon Sticks

  • 200g Star Anise


METHOD

  1. Place sugar, sherry, cinnamon, star anise and cherries in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves.

  2. Increase heat to medium and bring to a simmer. Simmer for 5 minutes or until the mixture has thickened slightly. Using a slotted spoon, transfer cherries to a bowl. Stand for 15 minutes to cool. Glaze Turkey and top of Turkey with cherries in the last 5 minutes of ham cooking time.
